Sage Butter

Its summer and if you’re eating more fish, you need this recipe.

2 sticks of butter
Handful of sage
Garlic 1 clove (don’t go crazy, this is sage butter-not garlic butter)
Anchovy paste (don’t skip this, it’s necessary to add dimension)

Add all the ingredients to a sauce pan bring to a slow simmer and let simmer for 20 minutes. Let cool. Strain the butter into gravy boat.

I like it on fish and pork. I usually make a big patch like this and I pour into ramekins to have on bread or bagels on occasion.
